While it is hard to find specific medieval or ancient history for Estaussan records, the broader region (Pays d'Aure) was shaped by Roman and Visigothic influences, as part of the ancient province of Novempopulania.

Locals joke that Estaussan’s unofficial mascot—a particularly vocal rooster—has more influence than the town council. Legend says the bird once disrupted a municipal meeting by crowing so loudly during a debate about noise complaints that the mayor had to adjourn the session.
